This Type 00 soft wheat flour is excellent for crafting an authentic Neapolitan pizza, with medium rising times of 10-12 hours at a room temperature of 25°C or 12-24 hours at 4°C. It is also certified by the Verace Pizza Napoletana (AVPN).
