The finest and freshest anchovies, we then mature them in Sicily, in sea salt from the very same sea. Once matured, we clean and fillet them, leaving a delicious and meaty anchovy with just the right level of saltiness. We then preserve them in the finest extra virgin olive oil, which compliments and completes the taste of the anchovies.
